UCHUJACU TRADITIONAL FOOD FROM CAYAMBE


UCHUJACU 

My father is from Cayambe and I have eaten UCHUJACU all my life. It is extremely delicious and nutritious. this dish is cooked by indigenous people from Cayambe When they have important celebrations such weddings, baptisms or ancestral celebrations they cook it. However, my mother has prepared this dish one day per week since that I was a child. So, I have feeling that every week we have a party.

UCHUJACU is a Quichua name that means spicy flour. I am going to start to explain how many ingredients has the spicy flour. it has different products such as barley, wheat, corn, vetch, lentil and haba bean. they are roasted and ground. After that, they are mixed with garlic, achiote and cumin.

Finally, the flour is ready for preparing a delicious soup. You can eat it without meat. the same way and it is still delicious, but when we have a party we add  guinea pig, beef, egg, cheese, and mote. (it is a kind of corn).You should try it even if you don't like guinea pig. You may taste only the soup. I have eaten the soup and it is not necessary that you add meat. I love it either way.
